I'd like to remap FLX4 to my liking, name changing included, but I can't get my hands on the definition file. Can I find it anywhere or export it out of VirtualDJ somehow since I'd hate to write it myself again?

write it yourself is your only option. Definition files aren't public.
Most cases definition files aren't needed, unless you're doing something exotic or if it's a device that offers user defined midi.
What are you wanting? it may be scriptable.
