I work in a venue and their TV has a bad HDMI socket, so I lose signal a few times a night. In VDJ 7 I just hit control V and it came back. In VDJ 8.1 it crashes the everything and Control V does nothing. Maybe there's a fix for this???

CTRL+V is doing exactly the same thing as it was doing in version 7 (turns Video Output On/Off). The same action is performed if you click on the Master video preview in the VIDEO center panel (of the default skin)
Make sure the CTRL+V is assigned as .. video in the keyboard mapping that you are using.

Are you using any Video Effects/Plugins at that moment ? Which ones ? Can you try to reproduce the issue without those Video Effects ?

I was at a venue before and the video was cutting on/off. It turned out to be the HDMI coupler I was using to connect 2 (6 feet) HDMI cable together.
I don't know if this is the situation you're in.
Usually, a TV has more than 1 HDMI input. Take a look at the back of the TV.
