How do i change the color of the decks in the midi mapping?
Deck 1 red - Decks 2 greens - Deck 3 yellow - Deck 4 blue

You cannot. It's a firmware limitation
As per the Manual https://www.virtualdj.com/manuals/hardware/pioneer/ddjflx10/advanced.html#settings ...
"PIFLX10-jogRingColor: Define the Color of the Jog's Ring. If on Stems (default), the Ring will be white if all Stems are enabled or a mix-color of the remaining Stems. The selected color applies to all Decks."
