I’ve created some custom mapping on my CDJ3000x. It’s possible that I’ll be playing on 3000’s at some gigs in the future.

Yes, absolutely possible.
Just click controllers tab on settings and then click the "missing controller" button on top.
Select CDJ-3000 on the left and then press the "Edit mapping" button on the right.
One thing worth noting here:
Since you're doing this offline, VirtualDJ does not automatically assign the new/modified mapper to your CDJs (because there are not any)
Therefore, the first time you'll get to play with CDJ-3000 you'll need to open the controllers tab again, and just assign the modified mapper to each CDJ by clicking their picture on top and using the drop down menu on the right.
