Can you tell me - I am looking into video - do I need 2 video cards if I want to control everything on your monitor and send the video to 2 sources - 1 projector and 1 one LCD TV? What do you recomend?

No, just buy a good videocard with two outputs. I've got a nVidia GeForce 7800 GTX, which has them, but ATI has always been the best for multi-monitor configurations (Maxtor was, but now it's only for craft & design offices).

or
ATI
X1700 or any above
Just check to get DDR3 memory on them, the more speed of the ram and GPU, the better card will perform ;)
