Quick answer. You can't. Well, not completely anyway. With some good EQing, you might be able to get it close, but with vocals being mostly in mid-range frequencies, you would take away from a lot of the instrumentals if you were to just lower the mids on your equalizer. The instrumentals that you're probably hearing are actually released by the artist/record label on their singles. Try to do some hard searching for the intstrumental for a track. If it's not released, you're pretttty much out of luck.

or buy Karaoke versions of songs, either karaokee cd or dvd and use those.
