I'd Like to know how to get my VirtualDJ name to appear upon launching the program during the slashscreen instead of my email address

You can't without breaking the EULA which is naturally unsupported here.

Everyone gets the e-mail address. It's stored in the Virtual DJ installation files which is one of the reasons why downloads are specific to each individual user and cannot be shared. So if you ever wanted to go back to an older version e.g. v6, you'd have to contact support rather than asking a friend for their installer.
