Might anyone know how we would go about setting the master XLR outputs to mono? Our last controllers had an available stereo/mono switch. Thank you!

prob a setting in the hardware check the manual if not your could use this on the master

Actually you don't need the plug-in / add-on
Just map a button with the following action: mono_mix
This action toggles mono/stereo for all outputs.
