Using Rane 4 controller. Is there a setting in VDJ to grey out sections of the waveform when adjusting low, mid and high frequencies as done in Serato and Recordbox?

On the controller itself ? No (it's not supported by the device firmware either, and so not even Serato does this)
On the software, there's the setting "waveGrayOnKill" but it's main purpose is to gray out STEMS and not frequencies.

Seems like an oversight by VDJ to not incorporate this feature. Hopefully will be implemented soon.

Pretty sure it's not really an oversight but just wasn't considered a priority because mothing much is gained from it's presence:
Regardless, implementation of this is probably a good thing, seeing as it's already done in some sense for stems (and stems really is a better replacement to old-school, frequency based EQing)
- It could be helpful to look at the waveform and know level of frequencies, but you can look at your
mixer and get the same information - It doesn't change anything the audience receives audibly
