Can someone tell me how to take a DVD video clip and convert the music part into an MP3 file. Is this possible to do? Can it also be done with other video formats eg Mpeg video?

I use IMToo's DVD Audio ripper to rip audio from DVD's. For divx files, I use Vdub.

I use ImToo MPEG Encoder ($35) for this But you should take a look at the ImToo DVD Ripper Platinum, it's their newest program and you can do a lot more things with your DVDs than just make MP3s.
I think it's like $45 but it's worth it.
